Forre com papel-manteiga duas fôrmas redondas de 30 x 30 cm.&lt;br /&gt;Divida a massa nas fôrmas e leve ao forno preaquecido a 160 ºC, por cerca de 30 minutos.&lt;br /&gt;Retire as fôrmas do forno e deixe o bolo esfriar para desenformar.&lt;br /&gt;Recheio de crocante com baunilha&lt;br /&gt;Leve o açúcar ao fogo brando, até obter ponto de caramelo. Retire do fogo, acrescente as avelãs, misture bem e despeje sobre uma superfície fria (como mármore).&lt;br /&gt;Depois de frio, triture a mistura com um rolo de macarrão. Reserve esse crocante. Abra a fava de baunilha no sentido do comprimento, separe as sementes e leve-as à fervura, junto com o leite.&lt;br /&gt;Bata as gemas com o açúcar e misture-as ao leite, no fogo, mexendo até engrossar. Retire do fogo e bata na batedeira em velocidade máxima até esfriar. Acrescente a manteiga e bata por mais 2 minutos.&lt;br /&gt;Retire da batedeira e misture delicadamente o crocante de avelãs que estava reservado.&lt;br /&gt;Calda (para regar o pão-de-ló)&lt;br /&gt;Misture os ingredientes da calda e leve ao fogo baixo. Depois de ferver, acrescente o rum. Retire do fogo e reserve.&lt;br /&gt;Finalização do pão-de-ló e do recheio&lt;br /&gt;Corte cada bolo em duas partes iguais, obtendo assim quatro círculos.&lt;br /&gt;Comece a montagem, colocando sobre um prato uma camada de bolo, regando com a calda (todas as camadas de bolo devem ser regadas com a calda). Continue a montagem intercalando o recheio de crocante com as camadas de bolo. Finalize com o bolo.&lt;br /&gt;Leve à geladeira para firmar bem, antes de espalhar a cobertura.&lt;br /&gt;Cobertura do bolo&lt;br /&gt;Misture a água com o creme de leite e leve ao fogo até aquecer bem. Retire do fogo antes de ferver. Acrescente o cacau, o açúcar e a glicose.&lt;br /&gt;Misture bem e por último junte a gelatina.
